In the log file I get

(SpamAssassin - Delete) Executing: sa\spamassassin.exe -x -c "sa\ruleset" -e 255
(SpamAssassin - Delete) Command line exit code is 255
(SpamAssassin - Delete) Filter result is reject/delete
Incoming mail action: reject/delete
550 Your message was not delivered as it was either considered spam or it contained a virus.

How do I find out what the actual score for that email was again.

Do I have to set it to tag - Is that the only way?

Yes, but you are not the only one that requests the score for deleted messages.
We will find a way to display the score of a deleted messages in one of the upcoming releases.
