I am currently running the Trial version of No Spam Today on our Exchange server.
It is setup to filter on the entire domain (*@domain.com)

However, I really only need it to filter on a select few email addresses that receive a lot of spam.
When I add these specific addresses to Page 3 of the SMTP Filter, only mail to these addresses appears to come through. The rest are rejected.

How do I setup the filter on select addresses and still let the rest of the email come in?

You can explicitly specify the recipient addresses to be filtered by configuring "Recipient Addresses to Enable Filter" in the first filter in the chain and activating "Same as Previous" in all subsequent filters.
Remember to restart the NoSpamToday service afterwards.
